Fenugreek (Methi) is one of the most ancient cultivated plants — its seeds and leaves have been used in Indian, Middle Eastern, and Mediterranean cooking and traditional medicine for over 4,000 years.

Fenugreek seeds are small, hard, and golden-yellow with a distinctive angular shape. Their flavour is slightly bitter with a warm, maple-like sweetness that becomes more pronounced when lightly toasted. In Indian cooking they are used in small quantities in tempering (particularly in South Indian preparations like sambar and rasam), in pickle masalas, in certain spice blends, and as a soaking seed for hair masks.

Fenugreek seeds can also be sprouted (4–6 hour soak followed by 24–48 hours resting produces small sprouts) and ground into flour for traditional preparations.
