Product Description

Antique Ayurveda Organic Tuar Dal (Unpolished) is made from certified organically grown pigeon peas (Cajanus cajan) that are split but not subjected to the polishing process used in commercial dal production.

The Problem with Polished Dal: Most commercially available tuar dal is machine-polished with castor oil or refined oil to give it a smooth, uniform appearance and prevent sticking during packaging — a process that creates an artificially glossy surface but removes some of the natural bran and adds a non-food coating.

What Unpolished Means: Our unpolished tuar dal has a natural, slightly rough surface. It retains the natural outer layer of the split pea that is partially removed during polishing, preserving more of the natural fibre and the full natural flavour of the pigeon pea — which is more robust and earthy than the milder, oil-coated commercial variety. It also cooks without the oily residue that polished tuar dal can leave in the pot.

India's Most Beloved Dal: Tuar dal (also called Arhar dal or Tur dal) is India's most widely consumed lentil — the base of everyday dal tadka, Gujarati toor dal, South Indian sambar, and the beloved Punjabi dal dhaba. Our unpolished variety delivers a more authentic, fuller-flavoured dal with the natural integrity of the pigeon pea intact.

Grown without synthetic pesticides or fertilisers on NPOP certified organic farms. No artificial polish, no oil coating, no additives — just pure, natural, unpolished tuar dal.

As Per Ayurveda

Tuar dal (Adhaki in Sanskrit) is described in classical Ayurvedic texts as Laghu (light), Ruksha (dry), and Vata-prakopaka (mildly aggravating to Vata) in excess.

It is generally well-tolerated in moderate quantities and is balanced by cooking with Vata-pacifying spices such as cumin, hing (asafoetida), ginger, and ghee. The Charaka Samhita mentions pigeon peas as a regularly used food grain in classical Indian dietary practice.

In unpolished form, the additional fibre content is considered to support natural digestive function. Ayurvedic cooking traditionally recommends that tuar dal be well-cooked and adequately spiced for optimal digestion.

FAQ
Q: What does 'unpolished' mean in dal and why does it matter?

A: Most commercial tuar dal is machine-polished with a light coating of castor oil or refined oil. This creates a smooth, shiny, uniform appearance and prevents grains from sticking in packaging. However, it also removes some of the natural bran from the split pea and adds an oil residue that can create foam during cooking. Unpolished dal has a naturally matte, slightly rough surface — it looks less 'perfect' than polished dal but is in a more natural, additive-free state.

Q: Will unpolished tuar dal cook the same way as regular tuar dal?

A: Yes — the cooking process is identical. Rinse, optionally soak for 20–30 minutes, then pressure cook with water, turmeric, and salt for 2–3 whistles. Unpolished dal may produce slightly less foam during cooking than polished versions. The cooked dal will be slightly more robust in flavour and slightly less uniform in colour compared to heavily polished commercial varieties — both of which are natural characteristics.

Q: Does unpolished dal taste different?

A: Yes, noticeably so. Unpolished tuar dal has a fuller, earthier, more robust flavour compared to oil-polished commercial tuar dal. Many people who grew up with hand-pounded or stone-ground dal recognise this as closer to the authentic, traditional taste. The oil coating on polished dal mutes some of the natural flavour of the pigeon pea — removing it reveals a richer, more characterful dal.

Q: How should I store unpolished tuar dal?

A: Store in an airtight container in a cool, dry place. Because unpolished dal has no oil coating acting as a protective layer, it can be slightly more susceptible to moisture. Ensure the container is completely dry before filling and store away from humidity. Properly stored, it keeps for 12 months. Check for any unusual smell before cooking.
